3 pounds lean ground beef
1 lbs ground pork
2 cans sweet corn
1 medium onion (preferably sweet onion)
2 cans Northern beans
1 can Dark Red kidney beans
1 can Light Red kidney beans
1 can black beans
1 jar of Salsa (medium, mild or hot)
2 packages of Ranch powder mix
1 pack of taco seasoning
1 can diced tomatoes
1 can pinto bean
1 can black eye peas
1 chili beans (add whole can in the pot)
Brown the hamburger and ground pork; drain. Add the salsa, taco and ranch dressing seasons packages, mix well. Add full can of chili beans, juice and all. In a strainer open and dump all cans of beans and corn into it …rinse the bean and corn mixture with cool water. Make sure for one you have a HUGE pot because this recipe will make a lot. I use a 12 quart cooking pot for this recipe. (You can freeze this soup for a later date). Dump beans into the pot a little at a time while mixing beans into the meat mixture. Do this until you have put all beans and corn in the 12 quart. Make sure you add a glass of water when you finish mixing the contents of your soup. Put on low heat, making sure to stir every once in a while so it does not stick to the bottom of your pot and let it cook for at least 2 hours – the more time, the better! This ensures the flavors seeps into every part of your soup to give you a rich and colorful taste.
