Caesar Tortellini Salad with Pork is something light and does not take long to prepare. Summer being on us, I know I want something that tastes good, light and does not heat my home up like an oven. I think we have enough heat and moisture outside that we do not need it while we are cooking in our homes!
Caesar Tortellini Salad with Pork Ingredients:
1 Large tomato, chopped
1 bag Caesar salad kit
1 lb pork chops, no bones
1 tbsp olive oil
1 package cheese tortellini
1/4 to 1/2 cup grated Parmesan cheese
1/3 c sour cream
2 tsp Dijon mustard
1/3 black olives (optional)
sea salt
pepper
Caesar Tortellini Salad with Pork Preparation:
Bring water to boil for the pasta. Add a pinch or 2 of salt to season the water. Preheat your pan to sear your chops.
Season your pork with a little sea salt and pepper on each side and olive oil. Place your chops into the heated skillet. Let them seer on each side for about 3 to 5 minutes on a medium heat. When cooked remove the pork from the heat and let the stand for about 5 to 10 minutes before slicing into strips.
Cook your tortellini following the package instructions. You need to reserve about a 1/4 cup of pasta water when you drain your tortellini.
Combine in a large salad bowl 1/4 cup Parmesan cheese, sour cream, mustard, Caesar dressing mix from your kit, reserved pasta water, and pepper to taste. You need to whisk all ingredients until smooth.
Add tortellini, olives (if you desire), tomatoes, croutons (from Caesar Salad kit), and the salad greens. Toss these ingredients with the dressing you mixed up. Your pork you have cooked and laid off to the side, slice and layer over the top of your salad. Sprinkle Parmesan cheese on top and serve to your family and friends!
